This wine is a blend that consistently yields a light but fresh style of Sauvignon Blanc year on year. The blend always consists of 85% Sauvignon Blanc sourced from Paarl, Franschoek and Constantia. The balance of the blend is made up of complementary cultivars such as Semillon. These cultivars add a wonderful aroma to the wine as well as some body to the finish without overpowering the light Sauvignon Blanc character. The components of the blend that are vinified at Steenberg are picked at optimum ripeness, pressed gently, racked clean and fermented with a yeast chosen to bring out the character of the fruit. After blending the wine was fined and stabilized before being filtered into bottle.
