Citrus, apple, biscuit, a hint of vanilla, and a little flinty reduction on the nose. The palate is rich but balanced by a great line of acidity – big volume, creamy mousse, savoury finish. Alc: 12%.

Blend : 53% Chardonnay / 47% Pinot Noir

With its light yeasty aromas, limey fresh fruit on the nose and rich creamy complexity on the palate, the Brut is intended to cleanse the palate, stimulate the taste buds and entice you to progress to the ‘next level’ in your tasting journey.

The exceptionally fine mousse contributes the freshness and finesse.

Serve very well chilled.

Pair with oysters, prawns and other shellfish are classic pairings. Grilled fish or sushi also work well.

Pale silver-pink. Aromas of raspberries, cherries and a few secondary whiffs of minerality. A lively mousse but fine in the mouth, with subtle red berry flavours enlivened by bright acids. Brisk on the palate, showing hints of oyster shell and fresh lavender. Flirtatious and fun, yet elegant and structured, it’s perfect for all seasons and settings.

Serve at 6-9 Deg.

Designed to taste fresh and balanced upon release.

Pair with sushi and sashimi, duck and cherry spring rolls or cured meats or charcuterie.
