Le Grand Domaine, perched above Stellenbosch in Devon Valley, spans 11 hectares planted mainly to Bordeaux varieties, with select Pinotage blocks reserved for focused expression.
Grapes were hand-picked in cool early mornings, then crushed, destemmed, and cold-soaked for a day in open-top fermenters. Fermentation, initiated with selected yeast, peaked at 29 °C over six days, with intensive manual punch-downs early on. The must was pressed at 2.7 °B, and the wine aged 12 months in 225 L and 300 L barrels, with malolactic fermentation split between barrel (50%) and tank.
