Description
A classic Bordeaux-style blend from Neil Ellis Wines, offering structure, depth, and elegance. On the nose, it shows layered aromas of blackcurrant, dark plum, and red cherry, complemented by notes of cedar, pencil shavings, tobacco leaf, and subtle vanilla spice from oak maturation. The palate is medium- to full-bodied with fine-grained tannins and balanced acidity, revealing flavors of cassis, blackberry, mocha, and a touch of dried herbs, leading to a long, polished finish.
Serve at 16-18 Deg.
This wine works beautifully with grilled ribeye steak, roast lamb with rosemary, beef short ribs, or herb-crusted rack of lamb.
While approachable now with decanting (about 30–60 minutes), it has excellent cellaring potential and can develop further complexity over 8-12 years from harvest.
