This Pinot Noir was aged in French oak barrels for 9 months and shows pure strawberry fruit aromas and lovely perfumed spice and earthy characters on the nose. The wine is wonderfully balanced with a long, refined finish.
Pinot Noir is a great option for food pairings. It pairs well with lightly flavoured dishes like risotto, salmon and mild beef dishes.
Serve at 12-15 Deg.

Grapes were gently de-stemmed, with whole berries retained and MOG (matter other than grapes) removed before being pumped to fermentation tanks. Inoculated with selected commercial yeast, fermentation occurred in stainless steel using twice-daily punch downs for optimal color, tannin and flavour. After fermentation, the wine was drained, transferred to barrels for malolactic fermentation and aged for 9 months—15% in new French oak, the rest in 3rd and 4th fill barrels—with just one racking. The final blend was selected after tasting individual lots and prepared for bottling.
