Crocodile’s Lair Chardonnay
Flashes of lime blossom and flint, with a gravelly undercurrent of rye and yeasty complexity. Expansive pear and yellow peach flavours launch off the palate, endlessly gliding on honey infused lemon drops. Unctuous, yet lively throughout. A citrus pith interest anchors the finish, calling for a return to the glass.
Enjoyed through all seasons with a wide range of dishes, particularly rich seafood, white meats and charcuterie.
Drink now though 2028.

The Kaaimansgat (Crocodile’s Lair) vineyard, 80 km from Hermanus and 700 m above sea level, lies in a secluded valley surrounded by mountains.
Despite challenging conditions, the vintage yielded a healthy crop. Chardonnay juice was lightly oxygenated before fermentation to reduce phenolics and enhance freshness. Most of the wine underwent malolactic fermentation for balance, then matured for 8 months in French oak (22% new).
